At the heart of this 16th-century Château, lies the gastronomic restaurant Lassey, with its botanical-patterned fabrics framing the panoramic views of the park, and its young Chef.
Keen on simplicity and the pursuit of pure flavour, Chef Alexandre Ziane plays with products from the Burgundy terroir, enhanced with aromatic herbs, as in his Bresse chicken prepared in two ways.
At Lassey, we offer a harmonious, honest and generous cuisine, one that reveals the indulgence and character of every season.
The menu of the season is complemented by daily suggestions, which are guided by the market's offerings and the Chef's instinct.
Chef Alexandre Ziane has shaped his culinary style in renowned Relais & Châteaux properties and Michelin-starred restaurants: Le Patio* in Arcachon alongside Chef Thierry Renou, Domaine de la Bretesche with Chef Jean-Pierre Honorin, Le Corot* with Chef Rémi Chambard, as well as at the Château de Versailles – Le Grand Contrôle* alongside Stéphane Duchiron, Executive Chef Alain Ducasse.
He discovered the kitchens of Table de Levernois* with our Chef Philippe Augé in 2024 before taking the helm of the Lassey restaurant at Château Sainte Sabine.

From November to the end of March, open from Wednesday to Sunday for dinner and for lunch only on Saturday and Sunday ;
In April, open everyday for dinner, and for lunch only on Saturday and Sunday ;
From the beginning of May to the end of September, open everyday for lunch and for dinner ;
From the beginning of October to the end of November, open from Wednesday to Sunday for dinner and for lunch only on Saturday and Sunday.
Service times: from 12:15 to 13:30 for lunch and from 19:15 to 21:00 for dinner.
On Saturday, we welcome you for the brunch at the Château from 11.30am to 2pm.
Annual château closure from November 23rd to December 17th, 2026 inclusive and from January 3rd to January 28th, 2027 inclusive.
Open for Christmas and New Year's celebrations everyday for dinner and for lunch on Saturday and Sunday.
