A native of Haute-Savoie region, Thomas Braghi comes across our vibrant Burgundy, with its frank character and rich terroir.
In his “farm & lake” recipes, expect a symphony of wild berries, fragrant herbs, and meticulously fermented ingredients, all interwoven with iconic Burgundian elements and classic French cuisine.

Chef Braghi’s culinary journey began at the prestigious Institut Paul Bocuse, followed by honing his craft under the guidance of three-Michelin-starred chef Jérôme Banctel at La Réserve Paris. His career then led him across the diverse regions of France and Switzerland, with his first foray into Burgundy alongside Jean-Michel Carrette at Les Terrasses de Tournus.
Now, Chef Braghi brings his vision to the Auxois region, at the serene Château Sainte Sabine—a haven where nature’s poetry meets refined culinary artistry.
From November to the end of March, open every day for dinner and for lunch on Saturday and Sunday.
In April, open everyday, except for lunch on Monday, Tuesday and Wednesday.
From the beginning of May to the end of June, open everyday for dinner and Sunday for lunch.
In July and August, open from Wednesday to Sunday for lunch and dinner.
From the beginning of September to the end of October, open everyday for dinner and Sunday for lunch.
Service times: from 12:15 to 13:30 for lunch and from 19:15 to 21:00 for dinner.
On Saturday, we welcome you for the brunch at the Château from 11.30am to 2pm.
Annual château closure from November 24 to December 19, 2025 inclusive and from January 2 to January 30, 2026 inclusive.
